Cocktail Chronicles 003: Clover Club


As of late, I have personally been fascinated with sours and some of their different variations. As a result, this featured cocktail will be an incredibly beautiful pre-prohibition gin sour -- the Clover Club

We recently had a bottle of raspberry liquor find its way into our household. You see, my girlfriend was on a mission to bake a raspberry filled cake for her mother’s wedding anniversary, and her recipe called for raspberry liquor. However, I was a bit curious as to what else we might be able to use this raspberry liquor for. Of course, cocktails came to mind and upon very brief research, I was reminded of a recipe that I had seen in the past. That, of course, being the Clover Club. If you are wondering about how my girlfriend’s cake came out, I’ll freely share with you, it was Great. However, upon assembling the cake and placing it in the refrigerator, she realized she had completely forgotten to use the raspberry liquor. Nonetheless, the cake was great and that will leave the entire bottle to experiment within other cocktails and likely additional evenings filled Clover Clubs. 


Similarly to the Brooklyn, I am excited to showcase the Clover Club because it is a cocktail that has been made popular by a craft cocktail bar that was very close to our Apartment in Brooklyn New York. The Bar, appropriately named Clover Club, is located in Brooklyn’s Prospect Park neighborhood and found itself on 50 bests best bar list in 2019 coming in at 100. Clover Club, the bar, uses a very authentic recipe that is thought to date back to pre-prohibition days. This recipe, however, is not the one we decided to try but we will also include that original recipe below the recipe we decided to try out. 


Recipe: 

  • 2 oz Gin
  • 1 Egg white
  • 1/2 oz Fresh lemon juice
  • 1/2 oz Raspberry syrup*
  • Garnish: Raspberries on a cocktail pick

Alternative Original Recipe 

  • 1 ½ oz. Gin
  • ½ oz. Dry Vermouth
  • ½ oz. Fresh Lemon Juice
  • ½ oz. Raspberry Syrup
  • 1 Egg White
  • Garnish: Raspberries on a cocktail pick

Instructions: 
  1. Add all ingredients to a cocktail shaker and dry shake (shake without ice) for 20-30 seconds
  2. Next, add ice to your shaker and shake again for 15-20 seconds.
  3. Double strain into a coupe, nick and Nora, or similar capacity cocktail glass
  4. Add raspberry garnish.

This cocktail is mightly delicious, so enjoy and please drink responsibly. CHEERS!
